Signature dishes of Russian cuisine made with regional specialties have been added to the breakfast menus of AZIMUT Hotels. The “Russian Breakfast” project has been launched in 11 cities and will be further expanded across all properties of the chain.

“Russian Breakfast” is the first large-scale cultural and gastronomic project by the EkoNiva dairy holding and the “Gastronomic Map of Russia.” Its goal is to revive interest in national cuisine and introduce dishes inspired by local traditions across the country. Each recipe uses natural dairy products from EkoNiva.

The largest hotel chain, AZIMUT Hotels, has joined the project and introduced dishes with regional characteristics into the main breakfast buffet menus in 14 properties across the network. The “Russian Breakfast” is available at AZIMUT hotels and resorts in Moscow, St. Petersburg, Yaroslavl, Pereslavl-Zalessky, Vladivostok, Murmansk, Astrakhan, Tyumen, Ufa, and Voronezh.

The dishes were developed with the participation of property chefs and AZIMUT Hotels’ brand chef Sergey Bortsov. Together, they drew inspiration from childhood memories and incorporated traditions from different cultures into the menu. In Astrakhan, guests can enjoy watermelon pancakes; in St. Petersburg, Guryev porridge; in Voronezh, fried eggs with Voronezh-style cured pork fat and porcini mushrooms; in Pereslavl-Zalessky, the traditional Russian dessert butenya made with baked milk and blueberries; and at the Moscow Tula hotel, cherry pie.

When traveling across the country, guests always seek a sense of regional identity: they ask about local cuisine, show interest in regional products, and look for unique places. The introduction of Russian breakfasts in AZIMUT hotels offers an opportunity to showcase the regional diversity of Russian cuisine and the distinctive character of national culinary traditions, taking into account the extensive geography of the hotel chain across the country.
