For over 8 years, [KU:] Ramen Izakaya Bar has been bringing together various aspects of Japanese gastronomic culture under one concept: ramen shop, izakaya, signature recipes, and drinks. Since 2018, the brand chef of [KU:] has been Vadim Malkov, who has repeatedly trained in Japan and regularly organizes guest chef events with Japanese chefs at [KU:].
The interior of [KU:] Ramen is designed in a restrained and elegant Japanese minimalist style, where every detail is carefully thought out. The space is filled with light and air — large windows let in natural light, creating a sense of harmony and calm. Natural materials such as light wood, matte metal, and warm stone are used in the décor. Clean lines, neutral tones, and the absence of excessive decoration emphasize the philosophy of Japanese aesthetics — simplicity, functionality, and respect for nature. The interior invites a moment of silence and solitude, allowing guests to focus on what truly matters — taste and atmosphere.
Noodles are the heart and soul of the [KU:] Ramen menu. Made daily on a special Japanese noodle machine using traditional techniques, the noodles achieve perfect texture — springy, elastic, and able to absorb every nuance of the broth. The authenticity and depth of the recipes are curated by concept chef Chizuko Shirahama, a native of Japan and the wife of the restaurant’s founder, Denis Ivanov. Her experience, deep understanding of Japanese cuisine, and attention to detail turn every dish into a true gastronomic journey.
The menu offers more than 10 types of ramen — from the rich, deeply flavored tonkotsu broth to the light and aromatic shoyu, as well as original creations with unique ingredients and innovative broths. Each ramen dish is a harmony of flavor, texture, and feeling. Whether a classic or an inventive twist, every bowl at [KU:] Ramen is crafted with love and deep respect for Japanese culinary traditions.
[KU:] Ramen is a renowned culinary project that blends traditional Japanese cuisine with original concepts. In December 2024, the team proudly represented Russia at the Tokyo Ramen of the Year ("TRY") festival with a unique borscht ramen, fusing the flavors of two cultures.
[KU:] regularly hosts top Japanese chefs, including Koitani-san, the legendary "Ramen God", and Michelin-experienced chefs Mizuhara-san and Iiyama-san.
The project has received the "Palm Branch" award for Best Restaurant Concept in Russia and is featured in the GreatList.ru guide as one of the country’s best ramen bars.
